葡萄酒配餐之清凉一夏 Food & Wine matching for Summer

炎炎夏日,相信大家对于喝红葡萄酒,尤其是重口味的红葡萄酒(比如赤霞珠)都提不起什么兴趣。上周某活动中,我连续试饮了30多款赤霞珠,如此炎热的天气,这无疑是一种身心上的双重折磨……在夏季,最佳饮品当属白葡萄酒和和气泡酒。笔者精心挑选了6款性价比极高的白葡萄酒和和气泡酒,并且在这里和大家分享一些中餐配酒的心得体会。

Hot summer, it is firm believed that there is no interest for any person to drink the heavy bodied red wine such as Cabernet Sauvignon. Last week, I’ve tasted over 30 different kinds of Cabernet in a tasting activity, there is no doubt that it was really suffering, both for the physical and psychological aspect. So, the best choice of summer drink should be white wines and sparkling wines. I have selected 6 various white and sparking wines as well as for sharing some of my food matching (only for Chinese food) experience.

 

入门级(Entry level)

Kim Crawford Sauvignon Blanc 2008

一款让我想起阳光的酒。淡淡的黄绿色,香气令人想起青草,西番莲,芒果,矿物和西柚。该酒口感丰富,酸度爽脆,余韵悠长。我喝的第一支Sauvignon Blanc。

A wine let me think of sunny. Pale straw green,the aroma reminiscent of grassy,passion fruit,mango,grapefruit and minerality. The palate is rich and succulent. Crisp acid and long-lasting finish. First Sauvignon Blanc I tasted.

 

建议搭配:美极元宝虾(Meiji Shrimp)

这款充满西番莲,芒果,果味浓郁,带有热带风情的长相思可以说是虾肉的绝配。不仅能带出虾肉的甜,更使虾肉吃起来更加的有弹性。

 

Grace Vineyard Symphony Muscat 2009

自然的青苹果,青草,蜜瓜,玫瑰和柠檬/酸橙味,这是一款干型、中等余韵的酒。酒体清淡,果味纯净,酸度爽脆。干净,易饮。

Giving neutral aromas of green apple, grass, melon,rose and lemon/lime, this is a dry, light bodied style with pure fruit, crisp acidity and a medium finish. Clean and easy-drinking.

 

建议搭配:上海冷面(Shanghai Chilled Noodles)

建议大家千万不要往冷面里加醋哦!

 

进阶级(Intermediate level)

Gerard Bertrand Le Blanc de Villemajou 2009

浅黄色略带绿色的边韵。白花,梨和热带水果的香气浓郁。口感清新,亦参杂白色水果和香草气息。新鲜易饮且酒体平衡。

Pale yellow colour with green hints. Rich nose of white flowers,pear and tropical fruit. Fresh on the palate, with white fruits and vanilla aromas.Easy-drinking, harmonious and crisp wine.

 

建议搭配:清蒸桂鱼(或其他任何适合清蒸的鱼类) Steamed mandarin fish(or any other types of fishes which suitable for steamed)

清新自然的酒,原汁原味的清蒸鱼,看似朴素的搭配,却是低调的奢华。

 

Vasse Felix Chardonnay 2010

对于一支新世界的进过桶的Chardonnay来说,这是非常好的例子。热带水果,香料,木头,柠檬味。中等集中度的口感带有热带水果风味,酸度很足,余韵优美。

Pretty good example of a New World oaky Chardonnay. Tropical fruit, spice, woody and lemony. Medium intensity palate with mostly tropical notes but lots of acidity. Good length.

 

建议搭配:菠萝古老肉(Fried Pork with Pineapple)

古老肉和水果罐头般的这支酒的组合,甜蜜蜜啊甜蜜蜜!

 

专业级(Professional level)

Trimbach Riesling 2009

依然是一款年轻的Riesling,没有汽油味。淡稻草黄。中等的香气,桃子,青苹果,柑橘,酸橙,白花以及一点白胡椒的辛辣味。非常严峻的酸度,口中感觉到些许蜂蜜味。酒体饱满,油质口感。中等偏上的蜂蜜余韵。

Still a young Riesling without gas notes. Pale straw-yellow. Medium aroma of peach, green apple, citrus, lime, white flower with subtle white pepper spicy on the nose. Very severe acidity with some honey tones on the palate. Full body and creamy. Medium+ honey length.

 

建议搭配:绝大多数中餐(Most of Chinese food)

Riesling素有中餐白搭之王的美称,高酸度化解中餐的油腻,纯净的风味也不会掩盖菜本身的味道,堪称与中餐绝配的葡萄品种。

 

Charles de Fere Reserve Sparkling Rose Dry NV

非常优雅的气泡桃红和香槟桃红在相似水准上。价格上算是一款超值酒。此酒展现了复杂的红色水果气息(红樱桃,草莓)和细腻的气泡。干净,纯净的一款酒。

Very elegant Sparkling Rose at the similar standard of the quality with champagne Rose and worthwhile depends on the price. The wine represents complex red fruity(red cherry,strawberry) notes with delicate bubbles. Pure and clean.

 

建议搭配:上海本帮红烧肉(Shanghai Braised Pork)

好久没吃红烧肉了吧,不敢吃?没关系,红烧肉搭配这款酸度爽脆的气泡酒一点都不会感到油腻,同时樱桃水果的风味和甜美的肉汁相得益彰。
